Colombian Orange Salad
Christian loves oranges. Orange is even his favorite color. So of course he loves this traditional Colombian fruit salad originating from the department of El Valle del Cauca. This fresh and tangy salad is a refreshing antidote to the hot, coastal weather. Christian makes his Chuyaco with three types of oranges, OJ, scallions, and panela (unrefined cane sugar).

Carimañola
Stuffed Yuca Meat Pies
A popular street food in both Colombia and Panama, the dough for these fried pies is made with mashed cassava (yuca). They can be filled with almost anything. Christian’s carimañolas are filled with ground beef and hogao (a savory mix of tomatoes, onions, garlic, and cilantro).

Ajiaco
Chicken Soup and Potato Soup
There are more than 800 types of potatoes in Colombia, so it’s not surprising that this soup is popular across the country and especially in the capital of Bogata with its cold climate. Christian’s ajiaco features chicken, corn, and 3 types of potatoes: Russet, Red, and Criolla. He tops the soup with capers and creme. Gluten-free. Vegan option: Veggie Soup
Posta Negra Cartagenera
Beef in Black Stew
From the city of Cartagena, this dish gets its name from the cut of beef (posta), the color it takes on due to the charring (negra) and its city of origin (Cartagena). Reserved for special occasions like New Years Eve, this dish gets its mad flavor from the red wine panela (pure cane sugar) sauce. Served with garlic rice, and) patacones (fried green plantains).

Cholados
Colombian Shaved Ice with Fruit
Also known as Raspao, this refreshing dessert is popular in Jamundí, in the region of Valle del Cauca, Colombia. Shaved ice topped with passion fruit puree, kiwi, strawberries, mango, blackberry syrup and sweetened condensed milk. Served with a Kinder Bueno Bar (milk chocolate, crispy wafer & creamy hazelnut filling).
