Ginger Pineapple Drink

Growing up, we always had this tropical spin on a non-alcoholic ginger beer with Sunday dinner. Of course, you can kick things up a notch by spiking your ginger pineapple drink with rum or another liquor of your choice.

Saltfish Crostini

Dried salted fish, a staple in Antiguan cuisine, is often prepared in a sauce with tomatoes, onions, peppers, and spices. Saltfish can be served for breakfast, lunch or dinner, as an appetizer or snack.

Vegan Option: Red Bell Pepper Curry Hummus - ground garbanzo beans with fresh lemon juice, roasted bell peppers, and a swirl of curry.

Gluten-free option: served with corn chips

Papaya Spinach Medley

Papaya is found all over Antigua. When it is green, it’s used as a vegetable. When ripe, it’s enjoyed as a fruit. In this dish, I’ve paired green papaya with spinach, sautéed in olive oil and spices.

Mango Curry Chickpea Stew with Chicken

Of all the tropical seasons, mango season is my favorite! In Antigua, we use mango in teas, cocktails, drinks, desserts, salsas, and stews. My Mango Curry Chickpeas Stew is rich, creamy, and of course, Mango-y! A plethora of spices are combined with coconut milk, mango and chickpeas slowly simmered to make a mouthwatering stew, served over Basmati Rice.

Black Rum Cake

This dark, rich, moist cake is known by several names — Black Cake, Rum Cake, and Fruit Cake. It’s a staple at holidays and other special occasions. This moist, alcohol-soaked cake with fruits has a rich pudding-like quality. Each bite is a celebration in your mouth.

Vegan/Gluten-free Option: Coconut Drops

Soursop Tea

If you’re not familiar with soursop (also called graviola, guyabano, guanábana), you’ll want to be! This rich and creamy tropical fruit that can be eaten or turned into juice or tea. As a tea, the leaves of the plant are brewed to extract the delicate taste. Plus, it’s high in Vitamin C! So, relax and enjoy!
